A Day in the Life
Every night while the city sleeps, our bakery comes alive. At Leaven & Co, time is a key ingredient behind every loaf and pastry we craft. It’s what ensures your bread is at its freshest, aromatic best when it arrives at your kitchen.
Our process begins days before the first oven is lit. Each batch starts with carefully selected, clean-label ingredients, with special attention paid to ensuring we use the best quality flours from very good mills. Doughs are mixed, kneaded, and given the time they need to rest and develop their signature flavors. Some, like our rustic ciabatta sandwich bread, require up to 4 hours of proofing and the most delicate handling to achieve their airy structure.
As the night progresses, our team of expert bakers masterfully performs a delicate dance, crafting over 200 products to meet the needs of more than 300 wholesale customers. Timing is everything. Orders come in throughout the day, and our ovens aren't loaded until the last possible moment, ensuring peak freshness before products are carefully packed onto trucks.
Yet, despite the rigorous process, we have built incredible flexibility. Our team is dedicated to saying “yes” to your last-minute demands, whether it’s a menu adjustment, an unexpected event or simply a forgotten order. That flexibility comes from years of experience and a deep understanding of what chefs need to succeed. Typical ordering cut-off is 3pm (on weekdays) the day before you need your order!
The best bread takes time. But the best bakery takes 20 years of experience baking before sunrise.
